Oatmeal Chocolate Chip Cookies
In a large bowl, beat ½ cup of softened vegan butter, ½ cup of brown sugar, and ½ cup of granulated sugar until creamy. Mix in 1 tablespoon of chia seeds and 1 teaspoon of pure vanilla extract. Add 1.5 cups of rolled oats, 1 cup of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of ground cinnamon, and ¼ teaspoon of salt and mix until just combined. Stir in 1 cup of chocolate chips/chunks.
Cover the bowl and refrigerate for 30 minutes before baking.
Preheat the oven to 350°F (180°C) and line a cookie sheet with parchment paper. Scoop about 1.5 tablespoons of dough onto the baking sheet for each cookie, flattening them slightly, leaving a little room between each scoop. Bake for 10-12 minutes, until the tops of the cookies are set.
